When Cadwallader Kelley operated the smokehouse he had the idea of marketing herring in little cellophane packages suitable for lunch boxes. These were sent out in cardboard display boxes for putting on a store counter.

Exhibit in Skinning Shed at McCurdy's Smokehouse in Lubec of materials and tools for fabricating the boxes that herring were shipped in.
Included are “shooks,” the tops, bottoms, ends and sides that came precut for assembly. The jig with a box in assembly, hammer, nails, and in back completed boxes. Shooks were purchased from area mills.

The only intact herring cart present when Lubec Landmarks acquired McCurdy's in 1995.
This innovation of the 70s was used to move the filled herring sticks from the Pickling Shed, out onto the wharf to drain and dry somewhat, and into the smokehouses.
At the end of the smoking, they were used to move the "handed down" sticks into the Skinning Shed.

A traditional implement about 40 inches long and pointed at one end so the herring could be slid on through one gill and out through the mouth in the “stringing” step.
Several thousand are in the Skinning Shed at McCurdy's Smokehouse in Lubec where they were usually stored after the smoked herring were stripped off. They have remained there ever since McCurdy’s closed in 1991.
When the smokehouse was in operation and herring came in, the sticks were taken to the Pickling Shed to start the cycle again.

In the Pickling Shed, workers carried out the second step in the smokehouse process: putting herring on sticks through their gills. The photographer used a strobe light to capture the swift arm motion of one of the “stringers.”

The sticks “strung” with herring were placed on “horses,” the traditional implement used before the wheeled carts. If the weather was good, the fish would be allowed to drain and dry somewhat before being moved to the smokehouses. If it was not good, this step took place under cover, as here.
